thanks giving, day 18
this morning, on my way to work, i realized how thankful i was that my car has functioning turn signals. i was surrounded by vehicles whose turn signals were not functioning ... and i thought to myself "wow, i'm able to travel much more safely than they are."

Well, it was either their turn signals not functioning or their brains.
re: making pierogis. It took me about 2.5 hours to create the pierogies. At this point, I expect it would take another 20 minutes to cook them, but it was 10:30 when I was done making them and I'd already had dinner last night.
The hard part was the dough. It was tough to roll out thin enough. Then I'd cut 3 pierogis in this circle I made and have to start again.
Another not easy part was figuring out how much to put in a pierogi -- a 3" one onle could take 2 - 2.5 tsps worth of filling. I had a ton of filling left over.
And this morning my hands are sore from rolling it out.
